Homemade Aloo Shimla Mirch with Sabji Masala
Ingredients
- 1–2 tbsp oil
- 1 tsp cumin seeds
- ½ cup finely chopped onions
- 1 tsp finely chopped garlic
- ½ tsp finely chopped ginger
- 2 diced green capsicums (shimla mirch)
- ½ cup chopped tomatoes
- ¼ tsp Prayosha Meera Turmeric Powder
- ½ tsp Prayosha Meera Kashmiri Red Chilli Powder
- 1 tsp Prayosha Meera Sabji Masala Powder
- 1 tsp Prayosha Meera Coriander Powder
- Salt to taste
- 4 boiled and diced potatoes
- Water, as required
- ½ tbsp freshly chopped coriander leaves
Step by Step Guide
- Heat 1–2 tbsp oil in a pan. Add 1 tsp cumin seeds, 1 tsp chopped green chillies, 1 tsp chopped garlic, and ½ tsp chopped ginger. Sauté for a minute until fragrant, then add ½ cup chopped onions and cook until golden brown.
- Add ½ cup chopped tomatoes, 4 boiled and diced potatoes, and 2 diced green capsicums. Stir well and cook for 2–3 minutes.
- Add ¼ tsp Prayosha Meera Turmeric Powder, 1 tsp Prayosha Meera Sabji Masala Powder, ½ tsp Prayosha Meera Kashmiri Red Chilli Powder, 1 tsp Prayosha Meera Coriander Powder, and salt to taste. Mix well, add water as required, cover the pan, and cook for 7–8 minutes.
- Garnish with ½ tbsp freshly chopped coriander leaves and serve the hot Aloo Shimla Mirch Sabji with roti, paratha, or phulka.
