Flavorful Dhaba Style Mix Vegetable Curry Recipe with Garam Masala
Ingredients
- 2 Cups Diced Potatoes
- 1 Cup Diced Carrot
- 1 Cup French Beans (cut into 1/2 Inch)
- 1 Cup Cauliflower Florets
- 3/4 Cup Boiled Green Peas
- Oil for frying
- 2 Tbsp Oil
- 1 Bay Leaf
- 2 Black Cardamoms
- 1 Tsp Cumin
- 1/2 Inch Cinnamon Stick
- 2-3 Cloves
- 1 Cup Chopped Onion
- 2 Tsp Ginger Garlic Paste
- 1 1/2 Cups Chopped Tomatoes
- 6-7 Cashews
- 1/4 Tsp Prayosha Meera Turmeric Powder
- 1 Tsp Prayosha Meera Coriander Powder
- 1/2 Tsp Cumin Powder
- 1 Tsp Prayosha Meera Red Chilli Powder
- 1/2 Tsp Prayosha Meera Kasuri Methi
- 1/2 Tsp Prayosha Meera Garam Masala Powder
- 1-2 Chopped Green Chillies
- 2 Tsp Chopped Coriander Leaves
- Salt to taste
- 1 Tbsp Butter
Step by Step Guide
- Heat enough oil in a deep-bottomed pan for deep frying.
- Add 2 cups of diced potatoes and 1 cup of cauliflower. Fry until they turn light golden.
- Add 1 cup diced carrots and 1 cup French beans. Fry until all the vegetables are cooked.
- Remove the fried vegetables and keep them aside.
- In the same pan, heat 2 tbsp oil. Add 1 bay leaf, 2 black cardamom pods, 1 tsp cumin seeds, ½-inch cinnamon stick, and 2–3 cloves. Sauté until fragrant.
- Add 1 cup of chopped onions and cook until they turn golden brown.
- Add 2 tsp ginger-garlic paste and sauté for a minute.
- Add 1½ cups chopped tomatoes and 6–7 cashews. Mix everything well.
- Add 1 tsp Prayosha Meera Red Chilli Powder, ¼ tsp Prayosha Meera Turmeric Powder, and 1 tsp Prayosha Meera Coriander Powder. Stir well to combine.
- Pour in water as needed and keep stirring until the masala becomes smooth.
- Add 1 tbsp butter and mix well for a rich and creamy texture.
- Add the fried vegetables along with ¾ cup boiled green peas. Mix everything gently.
- Add 1 tsp cumin powder, ½ tsp Prayosha Meera Garam Masala Powder, ½ tsp Prayosha Meera Kasuri Methi, and salt to taste. Cook for 2–3 minutes while stirring.
- Serve this delicious Dhaba Style Mix Vegetable Curry hot with naan, roti, or paratha.
